Autumn is here, and pumpkin spice is back! Grab your comfiest jumper, and try these quick and easy overnight pumpkin spice oats; the perfect accompaniment to crisp morning walks on crunchy leaves.

Place all the ingredients for pumpkin spice oats in a bowl and mix well. Cover, and leave in the fridge for at least 6 hours, or preferably overnight. In the morning, top with a sprinkle of mixed nuts for some crunch and a dollop of your preferred live yoghurt for added probiotics and creaminess.

I like to make up a batch of Pumpkin Spice mix, so I can add it to my porridge (and pretty much everything else!) if it’s looking particularly chilly outside. The addition of turmeric to this mix is something I love, not only for its warming and anti-inflammatory properties, but also because of the beautiful boost of colour it gives the oats.

Soaking seeds makes it easier for your body to break them down and access the goodness inside. You can make your own pumpkin puree by peeling, deseeding and roughly chopping a pumpkin or butternut squash, and gently steaming it for 40 minutes. Once cooked, mash or puree it in a blender, before storing for up to three days in the fridge. If this seems like too much work, America’s Finest offers a lovely additive-free puree in a can. If you can’t use up all your puree, just divide it into an ice-cube tray and freeze for an easy addition to your oats.
